I collect Rose Murray’s cookbooks and 125 Best Chicken Recipes is definitely going to be a favorite of mine.

I love chicken recipes. They are so versatile and you can flavor chicken so many ways. It goes with just about anything. And you can certainly see that from the list of recipes that Rose has developed.

Here is a quick sample of some of the fabulous and easy chicken recipes Rose has created:

  • Lemon Parsley Chicken
  • Moroccan Baked Chicken
  • Chicken Breasts with Chili Butter
  • Grilled Chicken and Cheese Salad
  • Cornmeal Crusted Wings
  • Chinese Chicken Rollups
  • Oriental Fondue
  • Thai Grilled Chicken
  • Mustard-Thyme Grilled Breasts
  • Citrus Grilled Chicken with Yogurt Sauce

and lots more.

We have been given permission to share a recipe from the cookbook with you. It’s an easy and tasty pesto grilled chicken recipe with fresh tomato pasta. You will find it here.

Rose brings in the flavors of all parts of the world in her recipes. I certainly haven’t tried them all, but I have read and made enough recipes in my life that I can usually tell if something is going to work well or not. These all look like great tasting recipes.

One of the things that I enjoy about Rose’s chicken recipes is that she often gives you the recipe for the accompanying sauce, but sometimes uses a store bought sauce in the recipe. To me, that gives me the option of making one of her easy dinner recipes on a busy night with not a lot of time to spare.

Rose’s recipes don’t often have a huge list of ingredients and the ingredients she uses are most often things you either have in your kitchen pantry already, or can easily buy at any grocery store. The recipes are for down home comfort food. Many of them are perfect for entertaining too, another bonus.

I always like reading the reviews that other people give of any new cookbook. They give you a good feel for whether this is a cookbook you will enjoy. Here are

YUM! by Dad of Divas

“There are many reasons I feel Rose Murray’s chicken cookbook is one that is user friendly. The recipes can be made in 30 minutes or less. Most of the ingredients you may have in your kitchen pantry or are easy to locate in your neighborhood grocery store. Rose has written excellent step by step directions for each recipe. She included suggestions for side dishes, including dessert ideas.

Some of pages illustrate the finished chicken dish. They look delicious!

The table of contents of this book include: wraps, stir fries, soups, salads, roasting and broiling, saute’s and skillet suppers, and grilling. I found quite a few that I want to try with my family in the coming weeks.

Enjoy this book and the recipes.”

Jule Sarasqueta in the Idaho Statesman says:
“Unassuming and down-home… quick, easy-to-use recipes. Every recipe comes with a suggested menu, and she also lists information about making the dish ahead of time and what to look for while shopping.”

Myrna Collins writes in the Appleton Post-Crescent:
“The recipes are clearly written, the ingredients are available and techniques uncomplicated.”

From Gwen Schoen in the Sacramento Bee:
“What we liked best about it is that each recipe can be prepared in 30 minutes or less… the format is well done.”

Yummy Real Food By A. Wauer
“Great book! Only drawback is lack of a pic for every recipe.”
