Each recipe uses the natural sweetness of fruits and other natural ingredients like honey and maple syrup (still high on the glycemic index), agave syrup, stevia and xylitol, a naturally occurring sugar substitute found in the fibers of many fruits and vegetables (and all three much lower on the glycemic index).

I especially love the fact that when a recipe is suitable for Stevia, a natural, 0 carb sweetener, the authors give you detailed information about how to substitute it for the sweetener called for in the recipe.
That’s a big plus for diabetics!
