This gluten free meatloaf recipe is not only gluten free, it’s egg-free, dairy free and nut free. That’s a real plus for those of us who struggle to find recipes that will meet all of our dietary requirements.
Food allergies can be quite serious. If you are really allergic to eggs for example, the bottom line is that you just can’t have anything with eggs in it – at all.
The same goes for those with celiac disease (a severe reaction to gluten) or an allergy to dairy products or nuts.
Eating any of those foods is a serious issue.
So for those people, this kind of recipe that leaves out all of those things that are common allergens is a real bonus.
The great thing with this recipe is that it isn’t one of those drab, horrible tasting recipes that conforms to restricted diets. It really tastes great.
Meatloaf is one of our all-time favorite comfort foods. It’s wonderful to know that you don’t have to give it up because someone in the family has dietary restrictions.
And you don’t have to eat bland tasteless food because you or others are gluten intolerant or have allergies to other foods like eggs, dairy or nuts.
Eating can be difficult for people who have these restrictions. Often the whole family has to eat according to the one person’s dietary needs for safety’s sake.
So isn’t it wonderful to find a tasty recipe like this healthy meatloaf recipe that the whole family can and will enjoy? There is no need to make a separate meal for the people in the group who have food sensitivities or eat tasteless food. This recipe probably suits them all.
How to Make Gluten Free Meatloaf
Most regular meatloaf recipes are held together with bread crumbs, which of course are usually make from wheat bread.
I’ve tried commercial gluten-free bread crumbs and so far I haven’t found any that I like. They tend to be very hard and too crunchy. Plus gluten-free things often get mushy once they get moist (from the uncooked meat for example).
This recipe works perfectly for those who need to eat gluten-free. It doesn’t use grains of any kind to hold it together. Or eggs, which is another common meat binder in meatloaf, along with the bread crumbs.
The clever ingredient that becomes the “glue” in this recipe is grated potatoes. If you grate the potatoes with a grater, the potato shreds cook up nicely with the meat and other vegetables in this recipe.
I would bake this meatloaf in a loaf pan, not free-form. It may not hold together as well as traditional meatloaf recipes.
I love the fact that this recipe includes vegetables other than the usual onions and grated carrots. It makes the meatloaf extra healthy.
I have listed a few suggestions for vegetables you can add in to the meatloaf for extra nutrition, but you can add vegetables of your choice. Finely chopped cauliflower or broccoli will work well to.
Whatever vegetables you like will more than likely work.
When you are adding vegetables to the gluten free meatloaf, chop them up fairly fine so they will cook properly with the meat. Large chunks of carrots or celery are not going to cook as nicely in the time it takes to cook the meatloaf. Plus it just looks nicer with the smaller pieces of vegetables.
The additional vegetables are optional, so if you don’t have them or don’t want them it’s no problem. Just put everything else together and bake it.
I usually make this recipe with ground beef, but you can certainly substitute ground chicken or turkey.
Ground chicken or turkey can be trickier to work with because they need more ingredients to make them tasty. Not with this recipe though.
There is lots of flavor in this recipe, so you shouldn’t have to make recipe adjustments to account for the chicken or turkey.
I tend to use a glass baking dish for this healthy meatloaf recipe, but you can use a metal loaf tin as well.

Equipment
- 1 large loaf pan
Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup potato, raw , grated
- 1/4 cup onion , chopped
- 1/4 cup carrot, grated
- 1 teaspoon salt, or to your taste
- 1/4 teaspoon pepper, or to your taste
- 1/2 cup beef broth, (vegetable broth or tomato juice work well too)
- 1 cup vegetables, chopped - peas, green beans, celery, red or green peppers (all optional)
- 1 cup tomato sauce, or ketchup (gluten-free if needed, optional)
Instructions
- Preheat the oven to 350°F.
- Mix all the ingredients well and place the mixture into a loaf pan. The loaf pan can be either metal or glass. Pour the tomato sauce or ketchup over the meatloaf and spread it out evenly.
- Bake the meatloaf at 350°F for about 1 hour.
- Add more tomato sauce to the top after baking if you desire.
- Serves 6.
